Buffalo black bean burger & parmesan fries


I honestly don't remember which day I made this meal last week, but I do remember it being ridiculously tasty. I was craving a "burger" with a kick, so I mixed some ingredients I had at home to make a Buffalo Black Bean Burger and some Parmesan Fries.


These fries were not my clean meal of the day, but made for a great indulgence. I used frozen straight fries and sprayed with with vegetable oil before adding on parsley, garlic, black pepper, and shredded parmesan cheese.


Now on to this spicy burger. I got so excited while making this that it even looked good pre-cooking. I used my large clear mixing bowl to add in the following ingredients for the black bean burgers:
Black Beans (1 can)
2 eggs
Buffalo Sauce (4 teaspoons)
Brown Rice (cooked, 2 cups)
Fresh Cilantro (1 handful)
Whole Kernel Corn (1 can)
Red Pepper Flakes (sprinkle lightly)
Curry (1 teaspoon)
Black pepper (sprinkle lightly)

Then you mix it all up!


So. Many. Flavors. Yum!


Oh, I also sautéed some onions in a skillet for a few minutes using olive oil, honey, brown sugar, and parsley.


I cooked a few burgers, individually. And I froze the others (like you would freeze meat burger patties). First I sprayed a hot smiled with vegetable oil then I formed the patties in my hands before placing them in the skillet to cook. I let my burgers cook on each side for 2-3 minutes to get hot throughout the entire patty and to make the outside of the patty a little sturdier.


When the fries were cooked, I sprinkled on some red pepper flakes and let them cool off before putting them on my plate.


My brother had some of these and agreed that they were divine.


Here's my meal on one plate. I added the sautéed onions on top of the burger and then topped it with tomato slices and French dressing. The fries were perfect without a condiment, but I know that a tangy or sweet sauce would go great with these!
